KBB#29: ECCLES CAKES
Eccles Cakes.....alias bakpia-nya orang Inggris....:p
Bikin fillingnya gampang, tapi bikin kulit pastry-nya very tricky...harus pakai tenaga dalam dulu...hihihi, nggak koq...;)
Yang jelas, bikin kue ini memerlukan tekad yg kuat krn ga bisa dikerjain buru-buru...minimal sehari semalem deh, baru jadi nih kue...apalagi buat kita di Jakarta yg udaranya akhir akhir ini, amat sangat puanassss... dough pastry-nya harus bolak balik masuk kulkas.
Anyway, buat yg mau coba bikin di rumah...ini resepnyaa...
Eccles Cakes
Makes about 50 smallish cakes
Filling
6 tablespoons unsalted butter
1 cinnamon stick
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
Peel from 2 lemons Peel from 2 oranges 2 cups dried currants 1/2 cup golden raisins
2 tablespoons brandy
1/4 cup fresh-squeezed lemon juice
Melt the butter in a small saucepan over medium heat. Add the spices and peel and fry until they are fragrant in the butter. Add the fruit, brandy, and juice. Simmer for ten or fifteen minutes, stirring occasionally. Let cool, then put in the fridge overnight to let the flavors really meld.
Puff Pastry
1 pound (4 sticks) unsalted butter
4 cups AP flour
1 teaspoon salt
Between 1 and 1/2 cups ice water
Take three of the sticks of butter and slice them in half lengthwise and then again widthwise. Arrange them into a rectangle on a large piece of wax paper. Put another piece of wax paper on top and roll them the butter out into a 9x12-inch rectangle between the sheets of waxed paper. Chill for at least four hours.
Put the four cups of flour into a food processor. Cut up the remaining stick of butter and add it, bit by bit, to the flour and pulse into dusty crumbs. Dump the butter-flour crumbs into a big bowl and add ice water gradually, stirring, just until the dough comes together. Knead for a couple minutes until smooth. Wrap and refrigerate four hours or overnight.
Roll the dough out into a 1/4-inch-thick rectangle and place the butter rectangle on top. Fold the corners of the dough over the butter and roll out to its previous size. Fold the sides of the dough up to the middle, like folding a piece of paper into thirds, then fold it again in half — like closing a book. You're working the butter into the dough in finer and finer layers; the butter if it stays cold will puff the pastry up in delicious and spectacular ways when you're finished. Wrap this parcel well and put back in the fridge for at least an hour or two.
Take the dough out and roll the parcel out into the rectangle again, then repeat the folding process. This is working the butter into the pastry in finer and finer layers. Continue this process - rolling out, then folding. These are called turns. Do at least four turns - six or more is even better.
It's very simple: the longer you let the dough rest and chill between turns, and the more turns you do, the lighter and flakier your pastry will be. I did five turns over the course of about 8 hours, and mine was fine - but if I was doing some other kind of pastry I would definitely let it sit overnight at least once.
Assembly
1 egg, beaten Coarse sugar
Heat the oven to 375°F. Line a baking sheet with parchment paper. Take a third of the the puff pastry dough from the fridge. It should be very cold and firm, but not hard. Roll it out to a thickness of about 1/8-inch.
Cut small circles - I used a biscuit cutter that gave me four-inch circles. You could do larger, but I wanted a lot of individual pastries. Put a small dollop of filling (about 1 teaspoon) in the center of each dough circle.
Fold in half, like a potsticker dumpling, and seal the edges with your fingers. Now bring the two pointy edges up and fold them in the center, on the curved seam. Flatten out the little pouch with your fingers, and roll it into a small circle - just thin enough that the filling shows through the dough a little. Try not to let it leak out, though. Make two or three shallow slashes in the top of the finished round cake.
Brush with beaten egg, and sprinkle with sugar. (Note: I think that my pastry dough was pretty warm by this point, from all the handling and rolling. I didn't try this at the time, but in the future I think I would put the finished, unbaked pans of cakes in the fridge or freezer to let them chill again - maybe for an hour. This would make a higher, lighter pastry.)
Bake for about 20 minutes, or until golden brown and puffy. Try not to eat one immediately - the hot raisin filling will scorch your mouth. These are amazingly good even a few days later
Eccles cakes have been a regional specialty in England since the late 1700s. They're similar to Banbury cakes.
They were first sold by a shopkeeper in the small town of Eccles and they became quite the rage, popular at the local church fairs, and eventually they got themselves exported all over the known world.
But the secret of the recipe was kept close and aspiring copycats had to guess at it. One early recipe included "the meat of a boiled calf’s foot (gelatine), plus apples, oranges, nutmeg, egg yolk, currants and French brandy."

KBB#28: TORTA PASQUALINA (Easter Savoury Cake)
Setelah izin tidak bikin pe-er KBB#27: Fortune Cookies, tentu saja pe-er kali ini tidak boleh dilewatkan..
Tantangan terberatnya adalah: mencari bahan baku kue yang punya nama mirip judul telenovela ini...:)
Karena asalnya dari Italia, bahan2nya pun bisa dibilang asing buat kita, orang Indonesia. Pertama baca resepnya, bingung banget baca Marjoram, Swiss Chard, Silver Beet, apaan tuh?? hehehe... Tapi setelah sharing sama teman2 yang tinggal di luar negeri ditambah browsing sana sini, akhirnya tau juga dimana harus beli atau bisa diganti dengan apa...
Setelah bahan2 terkumpul, baca resep lagi dengan lebih teliti trus dipraktekkan dengan mengikuti step-by-stepnya.. Dan akhirnyaa...tadaaaaaa....jadi juga Torta Pasqualina-ku...
Torta Pasqualina literally means 'Easter cake' in Italian. It's typical Easter dish from Piemonte and Liguria.
The dough is a layered dough, a bit like 'phyllo dough', but thicker. It's called 'pasta matta' (i.e. crazy dough)
As this dish comes from Liguria, it contains a local cheese called Prescinseua which can only be found in Liguria. It is very creamy, soft and slightly acidulated.
It’s unlikely you will find Prescinseau so a very soft ricotta can or a regular ricotta with the addition of a little milk will do.
Torta Pasqualina

Ingredients:
DOUGH:
600 g (1 lb 5 oz) white flour
6 Tbs olive oil
a pinch of salt
FILLING:
1 kg (2 lb) Swiss chard (silver beet) or spinach
400 g (0.9 lb) cottage cheese/ricotta cheese
100 g (3.5 oz) parmesan
10 eggs
2 teaspoons marjoram, chopped
2 teaspoons parsley, chopped
garlic, minced (optional)
olive oil
salt, pepper
Preparation:
1. DOUGH:
-Combine flour, oil, a pinch of salt and enough cold water to make amedium soft dough.
-Knead well for 10 minutes or until the dough becomes elastic.
-Divide the dough into 14 balls.
-Cover with cloth and let stand for about 1 hour.
2. FILLING:
-Clean, wash and dry the Swiss chard.
-Place in a saucepan with little boiling water and cook at high heat until wilted.
-Cool, then squeeze out excess liquid and chop finely.
-Add 50 g (1.7 oz) parmesan cheese, marjoram, parsley, garlic and 2eggs. Season with salt and pepper.
3. Oil a round shallow oven dish, 9 inches (22 cm) in diameter.
4. Flatten each piece of dough, one at a time, making each a very thin disk, larger than the baking pan you are going to use.
5. Lay the pastry on the oven dish, allowing it to flow over the edges. Oil it lightly.
6. Place another disk over it and repeat until you have used 7 disks.
7. Spread the Swiss chard stuffing over the dough, and then spread the cottage cheese over the greens level with a knife.
8. Make 8 small cavities. Pour a raw egg into each cavity and sprinkle each with salt, pepper and remaining parmesan cheese.
9. Cover the whole lot with the same number of pastry sheets, each brushed with oil.
10. Pinch the borders and trim the excess dough, prick the top of thepie in a few places and then brush with oil.

KBB#26: Panettone
Sudah lama tidak menguleni roti secara manual karena keenakan pakai breadmaker, pada tantangan kali ini saya 'terpaksa' kembali pada breadmaker alami yaitu kedua tangan saya...:)
Lumayan bikin ba-spir, kalo orang Menado bilang..hahaha
Tapi ga nyesel koq nguleni adonan roti ini, karena adonannya wangiiii...berkat fresh lemon zest-nya....seperti sedang aromatherapy jadinya...
Kalau saya bilang sih Panettone ini perpaduan antara roti dan cake....seperti Brudel..tapi bedanya kalau brudel, adonannya lebih mirip adonan cake sedangkan panettone ini adonannya lebih mirip adonan roti...
Sayangnya, roti ini gak terlalu laku di rumah saya...karena penuh dengan kismis, sultana, candied peels, dan buah2an kering lainnya yang kebetulan tidak terlalu disukai oleh kami sekeluarga...
Makanya jangan heran kalau liat penampilan panettone saya yang minim buah2an kering-nya tidak sesuai dengan resep aslinya..:)
Method
- Sprinkle 1 tbsp. granulated sugar and the yeast over the warm milk and let sit 3 minutes; mix and let rest in a warm draft-free place (e.g., a warm oven that has been turned off) until the mixture has doubled in volume, approximately 5 minutes;
- Pour the mixture into a bowl, add in the egg yolks, vanilla, lemon zest, salt and remaining sugar; gradually mix in 500 ml (2 c.) of the flour by hand until a smooth consistency is attained - the dough should easily come together into a ball; gradually add the butter cut into small dice and beat until the dough becomes smoother and more elastic;
- Add 125 to 250 ml (1/2 to 1 c.) more flour until the dough is firm and silky but not sticky; place the ball onto a lightly floured surface.
- Knead the dough for approximately 10 minutes. When the dough is smooth and shiny, place into a buttered bowl; dust lightly with flour, cover with a kitchen towel and place in a warm draft-free place for about 45 minutes until doubled in volume;
- Punch down the dough firmly with your fist and flatten it out in the bowl; add the candied lemon peel, raisins and currants and knead until well distributed but without working the dough more than necessary;
- Line a large bread pan with brown paper that has been well buttered on both sides; place the dough in the pan and trace a cross on top; cover with buttered paper and let rise again in a warm place for 15 minutes; remove the paper from the top; brush the top with softened butter.
Baking
- Preheat the oven to 200°C (400° F); place the bread pan on the middle rack of the oven and bake for 10 minutes;
- Reduce the oven temperature to 160° C (350° F) and continue baking for another 30 to 40 minutes, brushing again with melted butter;
- The bread is done when the surface is golden and crispy;
- Remove from the oven; remove the paper and let cool for 15 minutes before unmolding.

Sejarahnya adalah :
Roti Italia yang bersejarah, dihiasi dengan buah-buahan mungil bak permata seperti citrus dan raisin, pertama kali dibuat di Milan sekitar tahun 1490. Roti ini kemudian secara cepat menyebar ke seantero Italia, dari pegunungan Alpen di Utara, hingga ke Sisilia di Selatan. Cerita legenda yang populer adalah mengenai asal usul dari panettone.
Cerita yang paling populer adalah cerita tentang bangsawan muda yang jatuh cinta kepada seorang anak peremepuan dari seorang chef pastry bernama Toni. Untuk memberi kesan kepada ayah dari perempuan yang dia cintai, pemuda tersebut menyamar menjadi chef pastry junior yang sedang magang, yang lalu menciptakan roti berbentuk kubah (dome) yang manis dengan rasa khas. Roti rasa baru ini laku keras, orang berbondong-bondong antri di toko roti tersebut untuk membeli roti pan de Toni.
Di Milan, para pengusaha memiliki kebiasaan untuk memberikan roti panettone sebagai kado natal kepada klien-klien mereka. Namun, jauh sebelumnya, panettone dikenal sebagai makanan mewah, yang tidak semua orang mampu membelinya. Hingga pada suatu saat, tehnik-tehnik produksi baru bisa menekan biaya produksi sehingga membuat panettone bisa terjangkau semua orang. Sebuah proses yang mengkombinasikan ragi dengan paper mould akan membuat ragi merata di adonan roti sehingga menjadi roti yang sangat ringan.
Saat ini panettone, dikenal di seluruh dunia dengan berbagai variasi, dengan diisi krim, ditutup dengan coklat dan icing almond. Roti ini dijual dalam kemasan cantik. Panettone dapat dinikmati dengan seribu satu cara, dipotong tipis atau tebal, disiram dengan berbagai saus, diisi atau ditutup dengan krim. Sangat cocok sekali di toasted untuk sarapan pagi, dicelup ke susu dingin atau panas, hingga melunak. Panettone bukan hanya tradisi natal, tapi juga pelengkap yang lezat untuk hidangan yang nikmat.

KBB#25: Devonshire Tea
Tantangan KBB kali ini mengenalkan saya dengan Scones sebagai hidangan utama dalam Devonshire Tea ini..
Kalau dilihat dari resepnya yang sederhana, mungkin sebagian besar anggota KBB (termasuk saya..hehehe) akan menyepelekannya...tapi ternyata setelah dipraktekkan langsung, kue ini tidak sesederhana penampilannya...
Berikut beberapa tips penting yang harus diperhatikan dalam proses pembuatan Scones:
1. Adonan scones tidak boleh diaduk/diuleni lama-lama karena akan jadi keras..
2. Jangan menambahkan terlalu banyak terigu saat menguleni karena tekstur scones akan jadi kering dan keras.
3. Diperlukan suhu oven yang sangat panas untuk memanggang scones, yaitu kurang lebih 220 derajat celcius.

Resep Scones:

Untuk 12 potong
3 cups tepung terigu
6 sdt baking powder
¼ sdt garam
75g mentega
1 - 11/2 cup susu segar
ekstra susu
Ayak tepung, baking powder, dan garam ke dalam mangkuk. Masukkan mentega dan remas hingga berbulir2 seperti remah roti. Tambahkan susu dan aduk cepat menggunakan pisau sampai adonan lembut. Gilas beberapa kali. Tabur tepung sedikit ke atas baking tray. Letakkan dan tekan-tekan adonan scones di atas baking tray. Iris 12 potongan yg sama. Sisakan jarak 2cm antara satu scones dengan yang lainnya. Olesi susu segar di atas scones. Panggang dengan oven 220C selama 10 menit atau hingga matang kecoklatan.
Date Scones
Tambahkan ¾ cup kurma cincang, 1 sdM gula dan ½ sdt bubuk kayu manis ke dalam tepung. Sebelum dipanggang, taburi scones dengan campuran bubuk kayu manis dan gula.
Sultana Scones
Tambahkan ¾ - 1 cup sultanas ke adonan tepung.
Keterangan:
Devonshire tea adalah sebuah sajian minum teh khas Inggris yang konon berasal dari daerah Devon, dimana scones disajikan bersama clotted cream dan selai. Clotted cream merupakan krim kental yang kandungan lemaknya sangat tinggi, sehingga tidak banyak dikonsumsi.
Scones berasal dari kata sconbrot, merupakan ‘roti’ khas Skotlandia yang pada akhirnya diadaptasi oleh masyarakat Inggris menjadi makanan khas Inggris yang pembuatannya hanya meliputi tiga bahan utama: tepung, mentega dan susu. Tekstur scones haruslah ringan, dan tidak berat dan tidak basah seperti brownies, dengan demikian baking powder banyak digunakan sebagai bahan pengembang.
Rasa scones bermacam-macam, namun secara tradisional, scones disajikan plain dan tidak memakai banyak gula. Selain itu, scones populer dipanggang bersama cincangan kurma, kismis, sultanas, atau currants.

KBB#24: Rich Chocolate Tart
Seperti biasa, selalu semangat saat terima surat cinta KBB. Tapi pada tantangan kali ada, agak sedikit berbeda dari sebelumnya.. karena baru kali ini, aku setor laporan 2 jam sebelum deadline...hehehe..maaf ya, host..;)
Minggu pertama, lewat..krn sibuk ngerjain orderan..
Minggu kedua, lewat lagi..krn liburan sama keluarga..
Minggu ketiga, eh..lewat lagi..gara-gara kamera mendadak error dan harus diservis..
Minggu keempat, baru mulai panik...hehehe...belum dibikin juga kuenya..
H-3, akhirnya jadi juga Chocolate Tart nan lezat ini..
dan finalnya...2 jam sebelum deadline, dengan segala keterbatasan, akhirnya aku bisa setor laporan juga ke host.. Thank God! Legaaaa....
Tapi yang pasti, ga nyesel bikin kue ini... rasanya nyoklat bangetss, moist..wuahhh, kalo ga inget timbangan badanku yg udah over, rasanya pengen ngabisin sendiri...:p

KBB#24: Rich Chocolate Tart

Untuk 10 porsi
Pastry
185g tepung terigu
25g coklat bubuk
55g icing sugar mixture
150g mentega dingin, cincang
2 kuning telur
1 sdt air dingin
Campur tepung, bubuk coklat, gula dan mentega di dalam mangkuk FP, lalu proses hingga tercampur rata. Masukkan kuning telur dan air, proses lagi hingga menggumpal. Uleni adonan hingga lembut. Tutup menggunakan plastik, dinginkan di kulkas selama 30 menit.
Panaskan oven, suhu sedang (moderate).
Giling adonan pastry hingga cukup lebar untuk memuat loyang tart bongkar pasang ukuran 24cm yang sudah diolesi mentega hingga ke sisi2nya. Letakkan pastry ke dalam loyang, tekan-tekan ke sisi-sisinya, lalu ratakan pinggirannya. Tutup, dinginkan di kulkas selama 30 menit.
Tutup pastry dengan baking paper, isi dengan kacang2an kering atau beras, letakkan di atas loyang oven. Panggang tanpa ditutup selama 15 menit. Keluarkan kertas dan kacang2an/beras, panggang lagi 10 menit hingga sedang kecoklatan. Dinginkan.
Chocolate Filling
4 kuning telur
2 butir telur
55g gula caster
80ml krim kental
300 DCC, lelehkan
1 sdt ekstrak vanilla
Buatlah pastry, lalu turunkan panas oven hingga suhu rendah (moderately slow).
Kocok kuning telur, telur dan gula caster di dalam mangkuk kecil dengan mixer hingga kental dan creamy. Masukkan krim, coklat dan ekstrak. Tuang adonan coklat ke dalam pastry yang sudah dipanggang. Panggang selama 30 menit atau hingga filling matang/set. Dinginkan selama 10 menit. Jika suka taburi dengan ekstra coklat bubuk, hidangkan.

Pisang Goreng Sambal Roa
Snack paling populer di Indonesia, Pisang Goreng dipadukan dengan Sambal Roa.... Hmmm, yummy for tummy....:)
Resepnya sederhana sekali..
Pisang kepok mengkal dibelah hingga berbentuk kipas dicelup dalam adonan tepung beras + garam + air secukupnya.. Goreng dalam minyak panas sampai matang... Angkat dan tiriskan.
Untuk sambal roa-nya: daging ikan roa dihaluskan... iris halus bawang merah dan tomat, kemudian haluskan cabe keriting/rawit sesuai selera.. Tumis irisan bawang merah sampai berwarna keemasan, masukkan cabe dan irisan tomat. Masak sampai matang. Masukkan ikan roa. Campur rata dan masak sampai matang.
Hidangkan pisang goreng bersama sambal roa.... Enaakkk....:)
